never fail Yorkshire puddings recipe and pics

as a yorkshire man in the UK i should know how to make yorkshire puds it was bread in to me.
you guys share your recipes freely and so will i.

yorkshire puds recipe makes 12 puds

2 eggs .
1 1/2 cups of plain flour.
1/2 cup of milk.
2/3 cup of water.
1/2 tsp salt.
1/2 tsp pepper.
veg oil for the tray. (beef or pork drippings give more flavor)

crack 2 eggs in to a jug add salt and pepper and wisk by hand for 30 seconds with a fork.
now add the milk and water and wisk by hand for 30 seconds with a fork.
now add the flour and wisk by hand for 30 seconds with a fork.
leave for 5 minutes then wisk by hand for 30 seconds with a fork.
if you have lumps leave them it makes no difference trust me!
try to make this batter about an hour before you make the puds.

now for the pud tray the thicker the tray the better as it holds heat. i like to use a rounded bottom one but a muffin tin will do.
in to each individual pud holder put 1/2 Ts of oil and swerl it a round to coat the sides.
put the tray in to a pre-heated oven at 375 degrees F for 10 minutes to heat the oil and tray.
just before opening the oven give the batter a final wisk by hand for 30 seconds with a fork.
now fill each individual pud holder to 1/3 full of the batter as fast as you can then back in to the oven the tray goes.
(if you want to do roast potatoes at the same time put them in 15 minutes before the pud tray)
30 to 40 minutes later ready to take out (30 minutes for a soggy bottom)
DO NOT OPEN THE OVEN OR THEY WILL JUST FLOP!!!!
they freeze very well once cold.

Rebecca - Who isen't *completely* unfamiliar with food oddities, due to Aussie mother... but for the same reason, is also certain there is a very..... interesting... reason, for them being refered to as puddings.
