some people call it texas cavier......Texas Caviar
Always popular at a party, Texas Caviar (with its black-eyed peas) will make for good fortune for the coming year if eaten on New Year's Day.

* 2 cups black-eyed peas (fresh cooked or canned, well drained)
* 1 tablespoon olive oil
* 1 small can of chopped green chiles
* dash of cayenne pepper or your favorite hot sauce
* 2 tablespoons minced onion
* 2 tablespoons minced celery
* 2 tablespoons apple cider vinegar
* 1/4 teaspoon salt
* freshly ground black pepper, to taste
* 1 tablespoon minced fresh cilantro, minced (or more, if you are a cilantro fan)
* 2 plum tomatoes, seeded and diced

Drain peas, rinse with cold water and drain again.

Combine olive oil, chiles, cayenne, onion, celery, vinegar, salt and pepper, and mix well. Pour over peas and stir gently. Refrigerate for several hours or overnight.

At serving time, add chopped tomatoes and cilantro, and stir gently to mix. Serve with tortilla chips.
 
That sounds so yummy!! Alot of those ingredients sound like this dish I love at this restaurant in Natchez, Ms. The place is called "Pig Out Inn" they smoke there own meat and make great b-que sandwiches. But this black bean, with corn, onions and other ingredients must have alot of what this has. I just love it and have begged for the reciepe. But they won't give it up! I use to live in Ntz and don't get to eat there anymore

I am going to try this the way you wrote and then replace with black beans and corn and see how it compares

The blackeyed pea salsa is a variation of the blackbean and corn salsa. It works well with small red beans too.
 
I dont go straight by the recipe I sometimes just use what I have in the frige.....sometimes just peas,onions,tomatoes and cilantro....

Not brussel sprouts though.
 
Brussel sprouts should be small to prevent a bitter taste. Frozen never tastes as good as fresh.

Cook them quickly in a salted water then toss them in a skillet with a tisp of sugar, butter, garlic and crumbled bacon. Yumm!

BTW - eating a bit of bitter greens is good probiotics for the body.
