***OKIES in the BYC III ***

Canning isn't something to be scared of! For a long time I was scared to use a pressure canner (to many horror stories). Now the pressure canner & I are even friends.

Think it would be hard to do a demo at poops, unless someone has an outdoor portable kitchen. If you can boil water you can preserve in a water bath canner. Same goes with pressure canning. Only difference is you have to be able to read a pressure gauge & regulate you temperature. The extension office offers canning classes I believe.

They say if you are in doubt of your ability to get a good seal on a jar start by canning water. Just put water in your canning jars & pretend it is your favorite salsa. If it works then you graduate on to canning real salsa.
 
Reading 5 acres & independence. "guinea fowl are the least tamable and most independent of all poultry". See they are not stupid, just independent in their own special way.

I am with you pickling would be best. I am pickling eggs, both spicy and dill. I am not canning them just pickling. Kind of scared of trying to can them, without refridgeration. I want to start canning but am scared I will can a bunch of stuff and it will go bad. I have a perfect place to store canned goods just not sure about the processing.

Maybe we need to have someone do a canning demonstration at POOPS. I would really be interested in that and can provide the portable burners etc. for it, if someone would be willing to show how to do it.

No it's not w/ milk, but that is what I thought when I first heard about it too. Think real saurkraut. Fermenting w/ a brine solution. (or kimchie) It is an oldfashioned way to preserve food and it adds good probiotics to your diet and keeps the nutritional level of the food high. I am just now learning about it, haven't tried it much yet, but I am intrigued.
 
Not fair to call guineas stupid. It isn't their fault when they fly over the fence into the goat pen they can't get out of the pen.

they can walk thru a barbwire fence and then cant get back thru it!

they are tons of fun to watch arent they. i had some that got in the goat house and couldnt get back out without help.

only thing i have seen dumber is my wife's son inlaw.

Ed still has Show quality Naked Necks but the Society he used to run has not been active for several years. Ed is a great guy and will talk chickens, especially NN's with anyone.
 
aw, guineas are fun to watch.... they're kinda like that friend everybody keeps around just so they can laugh at them

Oh they definatly have an entertainment quality to them that is for sure!!! I am just glad we got our one female guinea to settle down, she no longer screams "buckwheat" all night and day. I love opening their pen of a morning because if they don't see the first guinea find the gate open they run around in circles squaking like "where did everyone go, I want out too". Cracks me up everytime, lol.
