Opposum for dinner? anyone? (Picture of dog with prey)

My dog got scratched:/ by a opposum,I cleaned it with alcohol and anti-biotic cream. I'm worried about rabies, but I heard they don't carry rabies.

Anybody else have this happen? he get's rabies shot's every 3 yrs., and it's about time for another one, but we were going to stop givivng them to him, because he has had cancer.

Many years ago I had a possum in my house (when I lived in the CITY, mind you). I removed it and called animal control. They told me that opossums are the LEAST likely wild animal to carry rabies.

At least they're not smart, like 'coons!
 
Good dog. I knew the well behaved ones were good for something.

I was about 6 when I learned this, so the memory is foggy, but the proper way to cook possum (or coon) is called "Double boiling". But the double boiling part is a half truth.

If you are going to eat it that day as part of a proper supper, you boil the meat first. This losens a lot of the fat and the "wild" from the connective tissues. Then you deep fry it and eat it like you would anything deep fried. Lots of texture of texture from the crispy batter and salt. Use a flavored oil like peanut and drink beer with it.

If you are going to stew it or put it in a pie you reverse the process. Fry it first at low tempature with no batter. The lard does its best to replace the "wild" fat. Let it drain.. Then boil. drain. put it a pot or pie and add LOTS of onions, cloves, rosemary or any other aromatic you like. Its not bad, but chicken is a lot easier to prepare and more reliable.

Good dog. Smart Dog. I wish they all were trained like that.

Edit: Recipe also applies to groundhog, which is where this conversation with my grandmother started after the family dog brought one to the front steps and I asked in awe what should we do now, and she told me to bury it and I wanted a different answer that involved less work

Hope you guys realise releasing a caught/trap nusance animal alive is illegal in most states. I was raised on wild game and love fried squirrel with gravy and Cat head biscuits . But I would have to be awful hungry to eat a possom

Possums cannot carry the rabies virus because their body temps are too low...at least that's what my FIL told me. He was in Wildlife Damage Control. He could rehome the possums, but not the raccoons for that reason. He couldn't rehome the Canadian geese either. That was NOT fun.
