My Mother for years did something that reminds me of your fermented tea, only she used fruit.
It would bubble and she would give other people a start.
She used it over Ice cream . It was kept on the counter in a closed glass container.
As a child I kept my eye on it!
 
I do remember she was always adding to it any little bit of fruit, at times it was quite large, and always bubbling!!!

I've tried kombucha tea. It's not bad. But I can see where it's not for everyone.

Angie, is there ANYTHING homepathic, traditional, or just plain homegrown, that you can't do?...
