Pellets vs. Crumbles vs. Mash ??

Another question as I await arrival of my first six RIR and Barred PR's:

My local Amish feed store sells Hubbard pellets and crumbles. Also, they sell (and I presume they make) a chicken layer mash. Is is significantly cheaper (nearly 40%) than the Hubbard's.

What is mash and does anyone here use it as their layer feed?
