Pumpkin Pie Recipe (Best I've ever had)

I'll be using this recipe as well, with fresh pumpkin. I was at Marsh in Brownsburg, IN they still have cans of pumpkin available. Let me know if any Hoosiers are having trouble, I can p/u some.

Your recipe is almost identical to the one on the Libby's pumpkin can, only substituting the sweetened condensed milk for the sugar & evaporated milk and using NUTMEG instead of CLOVES. Do you think one spice is better than the other?

Just not in a huge quantity...but the nutmeg adds that certain something to the pies imho... sort of heightens the flavours. The cloves add such a sweet smell and underflavour to the pie as well... they go great together in my opinion... just careful on amts so they are not overwhelming.

Half of it is GONE already & it hasn't even cooled completely! I didn't find it too much sweeter, but just nice & flavorful, even without whipped topping. (By the way, for whipped topping I like to get the real whipping cream & beat it in the mixer) I used only nutmeg but no cloves & I think I'll continue to make it that way. Sometimes the cloves can be overwhelming & give a sort of licorice-y cough drop-py flavor. I liked it without any cloves but with nutmeg instead.

And of course I used DUCK EGGS to bake it which made it taste EXTRA FANTASTIC!!!
 
How do you make pie crust?? Or just buy some already made up? Can I use graham cracker crust for pumpkin pie? Or is that weird? If you cant tell, Ive never made a pie before either. lol

I use the ready-made pie crusts, the kind you unroll & press into a pie pan.

I used to bake desserts for a restaurant making 9 pies each morning in addition to other cakes & pastries, but have since lost my light touch with pie crusts. The last ones I made at home were awfully tough. I keep telling myself to try again but each time I need to make pie crust for desserts or quiches I'm always running behind time and reach for the ready-mades instead. At least I crimp the edges by hand to make a nice presentation.
 
could you substitute sweet potatoes for pumpkin,vegies were on sale and I told the guy I wanted a case of each, and also ended up with a case of swet potatoes, I like to bake my own SP with the peels but these are cut up, so can I drain them, run them thru the blender with all the other stuff an bake?
