I have two a little over two month old sapphire gems. They are supposed to be pullets but I'm a first time chicken owner so was looking if someone could confirm that. One has the really dark head and the other has a lighter head. They seem to be developing quicker then my speckled Sussex even though they are a little older and it has caused me to worry they may be cockerels.
Thank you!

Thank you! That was going to be my next question because I have been questioning that Sussex as well.
Your Sapphire Gems are pullets. I see 1 Speckled Sussex cockerel in the last picture directly behind the Sapphire Gem pullet.

Pullets. You tell by the dark legs and darkening beaks. My new Sapphire Gems are about that age and if I didn’t know better would question them as well. Some of them can really develop quickly. I had one who I really thought was going to be a rooster and thought maybe she was too light to maybe catch the yellow dot but when her yellow feet started turning dark I knew she was a pullet.
