Are there any commercial egg farms in Paris? I'd have thought the commercial farms were rural. I'll check.

ETA I learned a lot about the egg industry in France but I was not able to find commercial egg farms in Paris. I found a report that said Europe imports cheap eggs from China, but 50% of the commercial egg market in France is traceable, ethically farmed, organic pasture raised. That sounds rural to me. I wish I'd had the presence of mind to copy the link to the report but I didn't.

There are commercial operations, but not that many : in 2022 480 millions eggs produced (number from local newspaper Le Parisien) out of 14 billions produced in the country for the same year.
Organic eggs have been in major decrease since COVID + inflation, as organic food in general in France.

The major culprit is supposedly a huge waste disposal incinerator. But as has been the case in other countries, recent independent investigation, the Forever pollution project, released the data on PFAS present in rivers and soils and they are all over the place.

I recall learning about PFAS several years ago but I hadn't realised they were so widespread in the environment. What a shame.

Also, I think because I mix in split pea flour before serving, it serves the glob the grains and seeds together into clumps. In their haste to stuff their sweet little crops, the chickens just scarf down the clumps and I never see anyone -- besides the broodies/mums -- picking out this or that.

I might try this. I'm going to try yellow split peas first just on the offchance it's the green colour that puts them off.
