Share Your Casserole Recipes

I love all these casseroles! And Pork Chops and Cabbage is one of my favorite winter meals!

This may sound odd, but it's cheap and yummy-comfort food. Comes out tasting a little like oysters!

New England Cabbage Pie

7-8 Cups sliced cabbage (one medium)
20 soda crackers crushed
1 1/2- 2 cups milk (or half & half or even yogurt, if you like a little tang)
1/2 sick butter or margarine
salt to taste and a black pepper

Layer crackers and cabbage in a casserole
melt butter and add to milk milk (or yogurt) and add s& p
pour over all cover with foil
at 350-375 degrees (depending on your oven) for 40-45 min
uncover for last ten for a creamier version.

I've added Parmesian cheese to this too and it's great!
 
Here is an appetiser we like...

Sausage Balls
2 cups Bisquick mix
1 lb hot sausage 9 ( I make a hot and mild batch)
1 lb pkg of cheddar cheese, grated

Let cheese and sausage set out until room temperature. Add Bisquick. Mix; knead with hands and roll into balls. Bake at 350* until brown on top...about 20 to 25 minutes.
 
Pecan Pie
4 eggs, lightly beaten
1 cup Karo syrup (light or dark)
1 c sugar
1/4 tsp salt
2 tbsp butter, melted
1 tsp vanilla
1 1/2 c. pecans
1 9" pie crust

Preheat oven to 325*. In large saucepan combine butter, sugar, & corn syrup; cook over low heat, stirring constantly, until sugar is dissolved. Cool. Add eggs, vanilla, and salt. Mix well. Add Pecans. Pour filling into pie shell. Bake at 325* for 50 minutes.
 
I have been making this for over 30 years. Quick and yummy. Kind of like a chicken and noodle casserole.

Amish Chicken Casserole

8 oz. noodles (your favorite size)
1/2 cup margarine
1/3 cup flour
1 cup milk
2 cups chicken broth
1 small can (about 3 oz) mushrooms (I usually use fresh)
2 cups cooked and cubed chicken
2 tsp. salt (or slightly less to taste)
1/2 tsp. pepper
1/3 cup grated Parmesan cheese

Cook noodles according to package directions; drain.

Preheat oven to 350 F.

Melt margarine, then whisk in flour until smooth. Gradually add milk and broth (separately or can be mixed); then stir in seasonings and mushrooms.

Combine chicken, cooked noodles and prepared sauce.

Put in ungreased 9x13" baking pan and top with Parmesan cheese. Bake for 20 minutes.

This can be made ahead and heated when needed but will take slightly longer to heat completely through.

Here is a recipe a dear friend of mine gave me several years ago...a little cherokee woman...who is an awesome cook!

Patty's Cherokee Tacos with Indian Fry Bread
1 to 2 lb ground beef, turkey, or chuck
1/2 c onion diced
1 can ranch style beans
1 8oz. pkg cheddar cheese , grated
2 tomatoes, diced
1/2 head lettuce, shredded
1 jar picante sauce

Brown meat in skillet. Pour off water and juices if any. Mix onion in meat and cook for 3 to 5 minutes; pour in the Ranch Style Beans. Let simmer until heated through and through, about 7 to 10 minutes.
Have fried bread ready...Also diced tomatoes, shredded lettuce, and grated cheese. Cut and dice the other half of the onion. Lay fried bread on plate & put meat and any or all of the other ingredients on top of bread. Top with picante sauce. VERY good.

Indian Fry Bread
2 cups self-rising flour
1 tbsp oil
1 cup milk, or enough to make soft dough

Mix all ingredients together to make soft dough. Turn onto floured pastry sheet. Knead for 2 minutes. Pinch off 2 to 3 inch balls and flatten with hand. Make very small hole in center. Fry in oil (EVO) until golden brown. Drain on paper towels. Use with Indian tacos or sprinkle sugar/ cinnamon on them.
 
I just planned my meals for the week from this website, its so full of great recipes. Id love to revive this thread as we love casseroles. ANyone have any new ones?

Potato Broccoli Casserole

Ingredients:

2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon ground nutmeg
2 cups milk
1 (3-ounce) package cream cheese, cubed
1/2 cup shredded mild cheddar cheese or process Swiss cheese
16 ounces (about 4 cups) frozen hash brown potatoes, thawed
2 cups frozen chopped broccoli, cooked and drained
1/4 cup fine dry bread crumbs
1 tablespoon melted butter

Preparation:
In a saucepan over medium low heat, melt the 2 tablespoons butter; blend in flour, salt, pepper, and nutmeg, and milk. Cook and stir until bubbly. Add cream cheese and Cheddar or Swiss cheese, stirring until melted. Stir in potatoes. Spoon half of the mixture into a shallow buttered baking dish, about 10x6x2-inch or 8-inch square. Top with broccoli. Spoon remaining mixture over the broccoli. Cover and bake at 350° for 30 to 35 minutes. Mix bread crumbs with remaining melted butter; sprinkle around edges of casserole. Bake, uncovered, 10 to 15 minutes longer. Makes 6 to 8 servings.
