If you cross two large families of broodfowl what will be the outcome, normally?

By saying broodfowl, I mean a straight bred pure families. I can say that because I have never added any outside blood to my broodfowl. I keep my broodcocks in the 4.2-5.0 lbs range. If I bred a pair of 2 families right now I would have 6-7lb stags running around here in the spring. I have to wait till March to start picking up eggs.
