The acid in the sour cream is needed to react with the baking soda in the recipe. If using pudding as a substitute, add a tbl of lemon juice or white vinegar. You could also substitute a teaspoon of baking powder per 1\4 tsp of baking soda too. The baking powder will change the crumb but will still be very good
 
After 17 pictures taken by Duckling, here she’s possibly doing the Egyptian while I was trying to get the whole picture. Not pictured is the whipped cream, pb and chocolate sauces.
