i made this concoction the other night.. i did diced up eggplant, mushrooms and onion and sauteed it in a cast iron skillet in some butter and olive oil.. added some squeeze garlic to the pan and just ate this with a sprinkle of puttanesca sauce.. the hubby wants me to put some of this on a pizza..

Anything w/saute mushrooms is groovy!
I like the addition off the eggplant.

• I could put this in a sub sandwich
• Served over rice. (white/Brown/yellow)
• Topped lightly on a fresh Garden Salad
• Topped on a bowl of Chilli

And of course what your DH Said... PIZZA!

i've already sauteed up a little more mixture [as i had one eggplant left] and will do it on pizza tonight.. i will let you know how good it is..
