I spoke too soon! That looks really good!
:lau I usually always try to post recipes when I mention something because most of my friends when I text them what I'm making, they always want the recipe.

I have coconut milk in the fridge so I think that this would be perfect for me to make today! I'm not sure what vegetables I have, but I'm sure I have plenty to make this.
 
Potato nachos

Slice two medium potatoes into 1/2 inch slices (skin on or off).
Toss in 2 Tb vegetable oil
Lay on cookie sheet, and salt and pepper both sides.
Cook at 450* for about 20 minutes.

Cook 1/2 lb hamburger. Drain
Add 2 Tb taco seasoning
2 Tb water
1 can of drained black beans
Simmer 10 minutes

Arrange potatoes on plate(s). Sprinkle with cheese. Spread/dump on the meat mixture. Add more cheese. Garnish with lettuce, tomato, onion (whatever) and add the sour cream or guacamole when ready to serve,
This is great for parties because there are no chips to get soggy.

Thanks for the recipe. Sounds really good. 1/2" slices sounds really thick to me, so is it still a finger food?
