I'm actually going to make vegan Irish stew with herb dumplings:drool

Our heat isn't working again so I need something hot to eat! I'm just glad that today isn't going to get any colder than 53. The technician is supposed to be coming soon supposedly.

I just ate leftover pizza from yesterday. Tonight I'll have sweet potatoes, brown rice, and green beans. Making chicken thighs for everyone else.

Anyone have any good chicken thigh recipes?

The ones that I am cooking have the bone in.

I made myself vegan beefless stew with herb dumplings. I'm starving from smelling it.

It's easy. From memory:

chicken thighs
bell peppers (red or green or both) slicked or julienned
Onions sliced thin
Garlic, Minced
Canned whole tomatoes, cut in quarters
chicken broth
Italian herbs
Salt & Pepper
orange peel

Need to see recipe for exact quantities, since I'm not home right now I can't do that, but this is a forgiving recipe. You can add more or less of anything to taste. I usually saute the bell peppers and onions until translucent and then add the garlic and saute for a minute more. Then put the chicken in a 9x13 pan, cover with the peppers and onions, tomatoes broth and herbs, salt and pepper. Probably 400 degrees for 50 min, or 350 but longer. I always go high and fast because the chicken stays juicier.

It's worth finding the recipe because it goes together easy and tastes incredible. I've probably missed something here too.
