Hi everyone! Popped in because for some reason I photographed my food the last couple nights to share in the Cup O Joe and Tea Too thread. Here is last night's dinner, a Healthy chicken pasta bake (easy too).

And this was tonight, Homemade Beef enchiladas. Did you know making your own enchilada sauce is easy peezy?

Sure. The sauce:

2 TB Veggie Oil (I use Avocado Oil)
1 TB corn starch
4 TB Chile Powder (less or more to taste)
1/2 tsp salt
1/2 tsp garlic powdered
1/2 tsp salt
1/4 tsp cumin
1/4 tsp Mexican dried oregano, or regular
2 cups veggi broth

Heat oil over medium heat. Add cornstarch and blend with a whisk for a minute. Then add all the herbs & spices for a minute. Then add veggie broth and allow to simmer for a few minutes until thickened.

And that's it!

For the enchiladas, you can make any stuffing you like. I can share my recipe:

1 lb ground beef, 1 onion, all grilled and browned, then add 2 cans of green chilis.

I like to soften my corn tortillas in a pan of medium hot oil, and allow to cool between layers of paper towels. Makes it easier to roll. About 12 tortillas.

Rub some oil in the bottom and sides of an 8x13 pan or use a spray to do this. Put a little of the enchilada sauce in the bottom of the pan. Put a dollup of the meat and onion in a tortilla and a large pinch of grated cheese, pref cheddar, jack or combo. Roll it and put it in the pan. When you have all the rolls in place, cover them with the remaining sauce, and cover with either cheddar or jack cheese, or a combo, 2 - 3 cups.

Bake at 350 for 25 minutes.

When it's done, sprinkle a generous portion of chopped cilantro on the top.

Dinner; Potatoes were baked on a cookie sheet with some olive oil sprinkled. I think they often called steak fries, or something similar,,,:idunno No idea how that name came about. SBR BBQ sauce instead of ketchup:drool,, 3 meatballs and some Baked chicken
