Living on borrowed time these days. My tablet got the ole 86 & had to switch over to a old style flipper phone because of breaking smart phones repetitiously. Only can access BYC from the home PC now. Working heavy hours as well. Liquidated numerous livestock species. kinda quite lately on the farm front..

Dinner tonight. Broiled Cod on seared spinach and topped with candied tomatoes. Rice pilaf on the side. View attachment 2018838
To make candied tomatoes, slice in half, put them on an oiled cookie sheet, drizzle evoo over them and sprinkle a little salt. Then put them in a 325 oven for two hours. They are incredibly delicious!!!

They really are. I buy vine ripened tomatoes that are ripe but not mushy. But you could make this with any tomatoes. You might imagine it's not tomato season here right now, and the tomatoes didn't have much flavor raw, but they were delicious when they were cooked. You really should try making them. It's so easy.

Today I went to make a burrito and realized I didn't have the leftover rice and beans I thought I did, so I put shredded chicken breast, candied tomatoes, cheese and salsa in my burrito. It was really good!
