This thread brings ideas as to what to make, or try. I just could not get potatoes out of my head and the potato pancakes that followed that thought. Just had to make them. It has been a looooong time since I made them last. Here is a play by play, and anyone trying, can just modify to your desired seasonings. This is a way I and previous generations of my species have been doing it. The multiple recipes I looked On Line, (there are over 4000 different options) all shredded the potatoes like for hash-browns. I kind of puree mine in blender. I do not overdo it to the liquefy point.
Here is list of things I used.
About 10 medium potatoes. (size and number not important, just overall quantity for your desired amount of cakes.)
One onion
4 eggs, (2 were from my OEGH)
Teaspoon of salt
Teaspoon of baking powder
Teaspoon of Italian Seasoning
Potato flour. I did not measure but guess about a cup that I added to
take up the excess water from the potatoes. I used Instant potatoes in the past instead of potato flour.
I added until the batter was correct consistency.

I first made 3, and stopped to taste/sample to make sure I had enough salt, seasoning, whatever. I tend to under-salt things. Its always easy to add.

If you see a GREEN TINT, its not the lighting, or improper lens filter,
(using my OLD FONE BTW)
It must be from the Italian Seasoning. (same as I used in pizza dough)

These are filled with wild blueberries also known as BILBERRIES. Another reference is low bush blueberries. They are common in THE EUROPEmuch more than here.
