Not the healthiest side dishes but comfort food regardless.
Crinkle cut French fries and homemade beer batter onion rings.
Zero time was left last evening so we winged it post haste.

Fries are good every once in a while, especially when in a hurry. If you were to die tomorrow...you wouldn't regret the fries. ;)
 
I don't know why, but I'm missing some notifications that there were new posts here.

We had taco salad for lunch. Tonight I made turkey kale soup. It has onions, carrots, a can of diced tomatoes, broth, and of course turkey and kale. Oh and some rice. It warms you up and is pretty delish. The seasonings are oregano, parsley, salt and pepper. I add a sprinkle of tumeric for color. View attachment 1190298

Future Yum.. Home made bacon
Started a pork belly cure a few mins ago..
Old Spot/Berkshire Pork Belly Section
1/3 cup of salt
1/3 cup of brown sugar
fresh cracked black peppercorns

Finger mix the salt/sugar/pepper together real well.

Place the slab in a deep pan.. this is really messy.

Pour on the mixture and rub it in on both sides and edges.. Work it in.

Seal it up tight in a jumbo zippy bag and place it in the pan. Refrigerate for 5 days or so. Making sure to turn it over once a day.

I will update this post later with the smoking process.

I have made a couple of meals...but need to post them. :th

I made roasted pork chops the other night. They're topped and bottomed with a light sprinkling of pepper and salt.

When done, the chops were paired with a dollop of apple sauce. Accompanying the chops was a baked potato with a dab of margarine and sour cream, and a healthy helping of green peas.
