DW made some tostadas for dinner. This is not from a recipe, but from stuff we had on hand. Ingredients vary each time. Taste always satisfies the palate. Ingredients;
White corn tortillas (blancas) soft, but heated in stove-top pan to stiffen.
Refried beans as base.
Cut up baked tilapia
Cut up seedless cucumber pieces.
Diced fresh plum tomatoes.
Garden salad.
Mango and peach Salsa. (mild)
3 Mexican Cheese Combo shredded.

Progress. Tortillas are stiff but not crispy hard at this stage. After baking they were stiff enough to hold.

Topped with Cheese, and into oven. Not long, just enough to heat up well and melt cheese.

Ok, bear with me, I'm new at this thread. Dinner last night was Pepperoni Stromboli:

First made the dough (added Italian Seasoning to it)

Then rolled it out into a rectangle and added toppings (pepperoni, black olives, mushrooms, garlic, mozzarella cheese):

Rolled it up and brushed it with egg wash

Baked about 22 minutes, then sliced it & served with a little marinara sauce:

And plenty left over to reheat in the toaster oven today for lunch!
