Thanks. They were good. Next time, I might roast the peppers just a few minutes before creating the nachos to throw in the oven.
When I asked my son if he wanted "nachos", he asked why I was using air quotes.
I told him that we were having nachos made with bell peppers, would he like those or ones made with tortilla chips. He chose tortilla chips.

Excellent choices roasting bell peppers I'll have to try it normally I just use raw
