Thawed a homegrown Berkshire Shank-
The Hub-one was moving too fast. So I'm low on prep pix. Sectioned bell peppers and an onion before I could find the new batteries for my cam.

Berkshire is famous for it's rich rose colored texture. The hunk was just sectioned and will be used tomorrow as well.
Bamboo skewers- held together the veggies and Berk.

Don't ask tonight what is in the homemade blackening he made in the magic bullet mini food processor. I'll see if I can get it written down.

Cooked over Kingsford Charcoal and Pecan Wood Chips. It's been raining like crap again so we are slaves to the charcoal industry tonight.

Soaked corn cobs in the sink for a couple hours. Drained them and smoked them.

Idaho potatoes half way nuked then injected with garlic butter. Then finished with Pecan smoke-b-q.

I guess it was ok... I'm not complaining. I didn't even have to do the dishes..

That was all the ole man. I was spectating, taste testing and trying to keep up with the pix. The potatoes squirted butter when cut open. And were a deep yellow color. Almost like a double baked potato. I didn't take a pic of the sour cream/chez & bacon bits-green onions. I was too tired and starving. I was up for 2 days straight.
We are switching Homeowners Insurance Companies and have an inspection on the 12th. Our current company doubled our cost from previous years. Long story-
I've been scrubbing-cleaning-painting and trying to relocate our guests. That's one of the many reasons I've been not so BYC active lately. Been krazzy. No rest for the wicked. I did get a good 6 hours sleep last night. But it's Saturday. Grandson is wrecking everything I cleaned and DIL is doing nothing to prevent it. Frustrating.
 
Gets BZ here on weekends. did not have much computer time. :(

I feel your pain Connie! Time for the houseguests to find another coop to roost in.

We went through a similar issue with our homeowners insurance in FL. Finally found a little local ins. office that covered us for about 1/2 the cost. Best of luck to you on that!
