I sauteed an onion and mushrooms, added jasmine rice and lightly browned it, then cooked in chicken broth with a couple bay leaves and some garlic pwd. Pretty good. Salt and pep to taste.

That rice looks/sounds delicious!

I had a baked sweet potato for dinner last night...baked until soft and topped with butter, salt & pepper. One of my favorites, easy and no mess.

I had Brussel sprouts too last night!! I can eat my weight in those things!!!

The rice was pretty good. I think it needed another bay leaf and bouillon needs adjusting but hubs said it needed a bit more salt and it was fine.

I haven't been in the mood to cook lately either. I haven't been able to create a menu or grocery list. I've been trying for a few days.

Sound like we're both in a funk Mike. Maybe we'll come across an inspiring recipe somewher that'll give us a jump start.
