I'm Scandinavian, but I could live on Italian and Mexican food!!! Just need to throw in a little lefse now and then.

I go to Mexican restaurant for chips and salsa. I never finish my meal because I eat too many chips

lf I couldn't eat pasta, I wouldn't be plant based im down for pasta any day. I did get a spaghetti squash to try this weekend.

Spaghetti squash is delicious! I like it just cooked plain with butter, salt & pepper

Guess what night it is at our house?

PIZZA! Yay, finally got my keister in gear and the crust dough is resting, the pepperoni and bacon is thawing. Got plenty of mushrooms (sorry BC & Penny) and a pretty red bell pepper, cheese too of course.

Finally...pizza!

I like doing it the easy way I just cut it in half (or chunks if it's big), scrape out the seeds, put it cut side down in a baking dish and either nuke it or bake it until tender. Then let it cool a bit so you can handle it and take a fork and shred out the strands.

And the chickens love the left over outer part!
