I have also used spaghetti squash when I make chicken or eggplant parmesan. After baking the squash, I scoop out the "spaghetti" and layer it in the bottom of the pan cover with the browned chicken or browned breaded eggplant, then marinara over all of it and topped with mozzarella and parmesan. Into the oven 400 if chicken and 350 if eggplant.
 
I like doing it the easy way ;) I just cut it in half (or chunks if it's big), scrape out the seeds, put it cut side down in a baking dish and either nuke it or bake it until tender. Then let it cool a bit so you can handle it and take a fork and shred out the strands.

And the chickens love the left over outer part!
My chickens love everything. They love pizza and noodles :lol:
 
I've never had that before. Is it similar to a crepe?
It is a flat bread, made with potato. Thin like a crepe, but not as delicate. It is rolled out. We eat it with butter and sugar, but many people use it as a wrap for fish, shrimp, or meat spreads. It would be great for roll up sandwiches.
