Here's my spaghetti squash. I rubbed it with some oil. I sprinkled black pepper, paprika, garlic powder, and onion powder. When it was soft enough to scrape I scraped it and added a bit more seasoning and put the oven on broil. Then when it was done I added 2 TBS of nutritional yeast and mixed it. It tastes so cheesy :drool

Was going to answer doing butternut squash, by N F C already did, and my method was same. I think I filled that hollow cavity with more butter.:drool:drool:drool
DW does zucchini,,, often during summer growing season. Slices in half lengthwise, and hollows out the center some, creating a sort of canoe. Takes the hollowed portions and dices. In skillet,(on olive oil or canola) caramelizes onion, diced mushrooms, diced zucchini, and adds some chopped walnuts at end. Seasoning , and salt to taste. Fills the hollowed canoes with the ingredients, and bakes. Not sure how long, but until done :idunno. About near end of bake cycle, sprinkle some shredded cheese. Usually we have the 3 Cheese Mexican Variety,, :drool:drool:drool on hand. Now that I think of cheese,,,,, maybe some of that Nacho Cheese topping would be tasty,,,, NOW ALL THIS WRITING IS MAKING ME HUNGRY:bow
Usually do a large quantity to fill a cookie sheet. Also usually for Fiestas when we have them:thumbsup
That sounds amazing!

I'm thinking about cutting up butternut squash and sweet potatoes tossing them and olive oil then tossing them in cinnamon... Then putting that in the canoes...

I make zucchini boats too! Love them! Pretty much the same recipe, except I put a hard cheese like Parmesan or Romano on top. So good!!!
