do the ginger the same way as the garlic-
a quart jar, Raw honey, Organic ginger, peeled and roughly chopped- I cut mine in small pieces, - fill the jar 1/2 to a little over 1/2 of the ginger- them pour the honey over the ginger
 
Oh, I have a question. I made my first batch of honey fermented GARLIC - but it's been 3 months. I haven't tried it, yet. I'm worried it's too old, now. I keep it in a cupboard. Should I pitch it?
no its fine, as long as the garlic is under the honey-
I took my 3 quart jars of garlic honey, spooned out the garlic all into one big jar- I use the garlic flavored honey to make salad dressing
