Here at the local grocery, a GF loaf of plain white bread is nearly $6! :eek: I figured I better start making my own. Sourdough is a new experiment for me. I had to wait until the garden was done before I took on another project though.

I think the baking thread here on BYC got me to take the plunge. I saw lots of gorgeous sourdough loaves, and thought, man, I want to be part of that club! I'm working on regular sourdough for DH, and GF for me. I spent $80 on a nice enamel on cast iron Dutch oven to bake it in (Merry Christmas to me), so I hope I can get some nice loaves out of this endeavor.

I make regular GF bread in my bread machine, and it turns out well. I can send you the recipe if you like, to pass on to your DIL. It does have milk and egg in it, just in case they can't have those...

She had text me the day before asking if I thought buying a bread machine for $80 was a waist of money, I said, yes because they make such a small loaf and you have 7 of you [ I bought it back in 1993 when my bread machine loaf was not enough to make sandwiches for my crew]
( :lovesoon to be 8 march 1st) to feed ,,, so, do you remember that double loaf pan I gave you that I didnt use any more??? "OH YA!, I forgot about that, its in the pantry"

So, yesterday I got a text pic of her GF bread in the loaf pan I had given her

She is craving bread with lots of butter ,, oh my poor sweet baby girl, how she misses eating regular fresh baked bread :hit
 
Gluten Free Machine bread
Ingredients
  • 1 3/8 cups milk, warmed to 100-110 degrees
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 2 jumbo eggs, or 3 med-large eggs, beaten (2/3 cup)
  • 338 grams Namaste brand GF flour
  • 1/2 cup old fashioned oats
  • 1/2 teaspoon salt
  • 1 Tablespoon sugar
  • 2 teaspoons active dry yeast
  • 2 Tablespoons instant mashed potato flakes
Instructions

Put yeast and sugar in the bread pan. Pour the warm milk over and proof for 10 minutes.
Mix the flour, salt, potato flakes, and oats in a bowl, set aside.
Pour the oil and honey into the bread pan.
Pour the beaten eggs into the bread pan.
Add the flour mixture to the bread pan.
Start the bread machine and set to the “dough” cycle.
After the dough cycle is done, use the bake cycle and bake one hour.
Cool the bread in the pan for half an hour, then turn out and cool completely.

Namaste brand flour works for me, so that’s what I’ve listed. I also got much more consistent results when I weighed it, but I don’t weigh any of the other ingredients. I use the dough and bake cycles because even though my machine is supposed to have a GF cycle, it mixed the dough a second time, turning it into a dense brick.

This makes a small loaf. You may want to up size the recipe. Since I'm the only GF person here, it's perfect for me.
