Oooh Boy.  I bought a french press some time ago and used it once.  But the real reason I bought it was because I had Vietnamese coffee at a restaruant.....:drool


I have queried them over the past few visits.  And dug out the fact that they use French Roast coffee with Chicory.   then its sweetened with Sweetened condenced milk  about two tablespoons full.  Their little coffee maker takes a tablespoon of coffee and about a cup of very hot water.    coffee is poured in filter goes on top somehow and hot water pouredin.

It drips down into the milk as it brews. and its maddening to wait....  But the reward is OH SO good.   The coffee is stirred with the milk and the whole think is poured over ice...  

While I do love iced drinks I just wanted to duplicate the flavor in my regular cup.  Mind you I drink four shots of espresso for breakfast...

The french press is the largest one i have ever seen.  (didnt realize it when I bought it)  Holds four cups of water.  I follow the directions on the can and put the required amouint of coffee... for me in.  Chickory adds a whole new level of flavor.  Nuked four cups of water and poured it in the coffee stirred it and put the top on.  Brewing time is four to five minutes.

Now I get to explore the Sweetened condensed milk.  Which I have NEVER EVER had in my cupbord.  You kknow I used to hang around an ancient Russian scientist we had coffee together in the mornings.  Matter of fact when he saw my truck drive in to the restaurant he would bee line across the road to join me.  Funny fellow.  But I listened we joked and I NEVER saw him eat ever... only coffee with sweetened condensed milk in it...  and he provided the restaurant with it.   

Now I know why....  OMG I made the mistake of licking the spoon.   It has a nutty cheesy sweetie come eat the whole thing taste. 

So French press brewed coffee with chicory.  And the heaven I described....  I taste no caffeine at all but me want more.

Sweetened condensed milk is great for Baking!

It is an old fashioned ingredient and is why stuff that Grandma made was so good.

I wish my Grandma baked or cooked or taught my mom how to cook. Grandma confessed to me tonight that she never had bread till she was nine, and it was store bought. Great Grandma made bisquits and cornbread. That was it. Grandma was one of nine that lived and the youngest. Matter of fact her oldest brother was in World War I when she was born. Then of all things Grandma was a working mom after firing husband number one she went to work as a Rosie the Riveter during World War II.

Mom never really learned to cook. i had to learn out of self defense. by then I was watching calories.

Yes, there are a lot of calories in things cooked with sweetened condensed milk. If you want a good dessert, look for it as an ingredient.

Our Christmas dessert this year was Chocolate Pecan Pie and it has a can of Sweetened condensed milk in it! It was very tasty but I bet it had Zillions of calories in it.

One of My Grandmas was an ok cook. They other was a very good cook. I started learning at a very young age and am still learning. Currently I am reading a book called the Food Lab and it is all about the Science of Cooking. I love it!
