I adapted this one for the amount of lemons I had. I like the 24 hour soak with the seeds so you don't need pectin. Mine overcooked a bit because my candy thermometers sucks.

. I have it trained on a East wall, It should be on the Southern exposure in full sun In a protected spot. I am at 2000 ft. also. Apples do well, most of the berry fruits and cherrys. Our climate there can be touchy. I do prefer it to the hot sandy, humid coast. Nothing goes unscathed by the humid air and hot dry sandy soil. If it does the fire ants get whats left. Even the spring crops.

Rather jealous of you folks you can grow citrus. Won't grow here. I can't even grow the figs I had 3 hours south of me at less than half my elevation. I've tried and tried.

There are hardier varieties- I have some fig plants in the garden at my old house and they do great, even though we dip below zero some years. I have looked and looked and can't figure out what variety they are. If you were closer I would say come get some starts! They are more like a bush with each branch growing straight from the ground.
 
Brown turkey and negrone are suppose to be a better choice but you have to protect them from the winds on our hills. The later grows short but is almost black in color and taste abit like a prune to me. I like prunes but not

Me too. We can't grow it here either, it's too cold. My MIL can, as she's much lower in elevation, and she gives me a lot off of her tree. If/when we put in a greenhouse, a Meyer lemon will be the first occupant in a 1/2 wine barrel. (so I can wheel it out in the summer.
