Stella's Social Club

Puppies Orange Blossom and Manuka left for new homes Saturday. Orange Blossom went to a very nice young lady that works for 4-H out of Perdue (Indiana). She will be kept busy. Manuka went to a sheep farm in Michigan, and has a show career plan. I'll be co-owning Manuka for 2-3 years. Puppies Tupelo and Clover current plans are to stay with us, but we may decide to let another go.

Manuka looks like a star in the making! And the rest are adorable also.

Yikes, been out today for showings. I did manage to get a loaf of wheat bread made. Well, half white flour, half whole wheat. I am easing into it.

Kelly, did you find the banana cake recipe? I took pics of mine today. So good Michael said throw it out!
Bread looks great! And no, I didn't get the recipe. I'll be making it today.

How do you get your pound cakes moist? Mine are always too dry for my liking.

Did you watch the British Baking Contest?
I modified a recipe and I love it. It's very moist.

Ingredients
  • 2 cups flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter at room temperature
  • 1¼ cups sugar
  • 2 large eggs, at room temperature
  • ¼ cup lemon juice
  • 2 tsp lemon zest
  • 1 8 oz container sour cream or plain yogurt (I've done both and they both come out great)
  • Glaze:
  • ½ cup powdered sugar
  • 1½ tsp fresh lemon juice
  • 1-2 tsp milk
Instructions
  1. Preheat oven to 350. Grease and flour a 9X5 inch loaf pan. (the loaf pan I use is a really large one)
  2. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
  3. In a large bowl, beat the butter and sugar with an electric mixer until light and fluffy. Add the eggs one at a time. Beat in the lemon juice and zest. On low speed, add the flour mixture alternating with sour cream, beginning and ending with the flour mixture. Pour the batter into the prepared pan and smooth the top.
  4. Bake the cake for 50-55 minutes, until a toothpick inserted in the center comes out clean. Let cool in pan on a wire rack for 10 minutes. Remove the cake from the pan and let cool completely on wire rack.
  5. Make lemon glaze. In a small bowl, combine the ingredients to make a smooth glaze. Drizzle over pound cake.

And yes, I did watch the British baking show last night. It was amazing what they made!
