Tilapia would be best, but they are *almost* forbidden in this state. HOWEVER, if I'm willing to submit to inspection (which I already do as part of my NPIP), because it will be placed inside the greenhouse, and because the greenhouse/barn sit within a "bowl" in my property, there is no (not even 10,000 year flood) condition that would allow the fish to escape. So I may be able to get those permitted (and might be the only private individual in the state to do so). If I can't get permitted, catfish.

Either way, firm, white flesh fishes good for baking and smoking for fish dip.

Huj, I didn't know tilapia wasn't allowed to be raised in Florida. Is it because they could become invasive?

Yes, they are absolutely invasive. Also, good eats.

and I don't fry any food, because I inevitably burn myself. My wife claims I have no respect for heat, and that routinely burning myself is the consequence. She's right.

I'd stick with tilapia then if you're allowed to get somenafter inspection. Much better baked or grilled than catfish imo.

But also good wilted like spinach - either all the way with butter and garlic, or half way with bacon and feta.
:drool with garlic....

I tried raw chard last summer.... eh... not a fan. Someone here on BYC suggested using it in a stir fry or wilting it. That made me a convert. Maybe someday I'll try it again raw.

Interesting about the tilapia. They're legal here in Michigan, no permit needed that I know of.

If you have to go with catfish. See if you can get blue cats. They taste better than some of the other types.

Don't know anything about it but if I had a pond I'd look into Crappie.
They are a very good eating white flesh fresh water fish.

I'd love to see what you do with this.

I have a 55 gallon indoor aquarium. Well water, I use no chemicals. I have always used aquarium water for house and porch plants. They really love it. Last fish was a gold fish that got huge. He passed a while back and I am letting it cycle and cleaning everything. Going to start over fresh.

I suspect the climate makes the difference. Tilapia might survive in the wild during a Florida winter, but should not be able to make it through a Michigan winter. That really limits their ability to start a breeding population and cause trouble in Michigan.

According to wikipedia (which may or may not be accurate), the most cold-hardy tilapia die at 45 degrees Fahrenheit, and many of them die at temperatures warmer than that.
