So delicious and soooo simple. It is a family favorite at our house.
I'm totally going to have to have my daughter bring home a roo from work now! (She works on an organic egg farm - they put tons of roos in the freezer - her boss would send her home with one in a heartbeat!) I know what we're having for dinner!

That sounds like an interesting job for your daughter. Must be fun. And so nice her boss will send her home with some meat too.

Do you know roughly how old are the males when they process? I prefer younger males because they are still very tender, older males get a little tougher and stringier.

I'm going to participate! We've used broodies before, but this will be our first time using an incubator. I hope some of them make it! Our chicks will be mixed breeds from our various heavy breeds.

They process their boys at under a year old - the spring straight run chicks get culled back to all hens in the fall. I'd say none are more than 5 months. Its a shame her boss doesn't keep a few roos to replenish her stock. According to my daughter they put a gorgeous welsummer roo in the freezer last fall....
