I'm hopping over from the chicken boards for a minute...
If I were to get turkeys for the express purpose of having them for dinner at some future date, should I care about their genders? I mean, I'd only want two, and unsexed is cheaper when they're young, or toms seem very cheap later. Do I really care? Is there that much of a difference between them other than size? (Noise, human aggression, taste, difficulty processing, etc)?
If it matters, I kind of lean toward Bourbon Reds.
