well, it was a hit. It held up after being cut, tart and lemony, slightly sweet, really great for whisking a few ingredients together in a bowl. I can't take any credit though, its trisha yearwood's recipe from food network. The only thing I changed was the crust. I thought a pastry crust sounded much better with lemon than a graham cracker one.
3goodeggs I'm so jealous you have a lemon tree!!! I must buy 6 a week. I use lemon in so many things.

I do believe I am going to try this out this coming weekend.
I am an awful pastry crust maker though. I think that's why people go with graham cracker. Although last time I made a cheese cake, I whipped up a sugar cookie dough, baked it first and poured the cheese mixture over it. It was perfect. maybe I will try that for the pie.
The tree came up in the compost pile. It is in a bad place, under the power lines, but I feel it is the cosmos' way of telling me that things can still be great without being perfect.
 
healthy? Hmmm lets see... Its got a whole can of sweetend condensed milk in it. Yum! Its not so much a jello type filling as it is a pudding type filling. Egg yolks, lemon juice, zest, condensed milk, I'll let everyone know in a bit how it tastes when we cut it. I'm just hoping it stays in a pie piece shape when I cut it. I'm hoping it works out because I loooove lemon pie but seriously hate the stove top cooking part.

This is the recipe my Mom used. I actually thought this was real lemon meringue pie until I moved away from home & had some that was the cooked type, and was told that what I make is called "ice-box pie". I really love the condensed milk type pie, so quick & easy to make,

Pillsbury makes a GREAT pastry crust. 2 come in a pack. It's already rolled out and everything. I'm using the second one from the package to make a quiche tonight. oh, BTW, the pie was just as good the second night. It was really a winner recipe!!! :)

To make, use Butter cookie or sugar cookie dough--either home made or store bought.

Use a big cutter for the outer ring and a smaller one for the center.

Crush the jolly rancher candies--we used double sandwich bags and the flat part of a meat tenderizer. Use a cookie sheet with parchment paper--fill the hole with the cracked candy and bake at 350 for around 12 min. Depending on the cookie recipe and oven, the time could be shorter or longer.

Very fun project!

How fun! My son and I are currently going through his Stargate DVD collection. We have just started the Ori. I am not sure I am up to Ori.
So, any ideas for Dr Who cookies? A sci fi party might be a fun idea for the end of school.
