What are you canning now - 2009 edition!

I think I have canned everyday this week, lol. So far I have chow chow, zucchini relish, green tomato pickles, canned tomatoes and tomato juice. Yummy good stuff!

Oh forgot about salsa!

Jalapeno Jelly is next on my list... I have a large amount of jalapenos (the only plant in my garden that hasn't developed a fungus due to all of this rain

) so its next on the list.
 
My husband in on his way home from Portland with 50# of beets and 50# of pickling cukes.

I have my kitchen set up and the jars and rings in the dishwasher on the sanitize cycle. I will do a rinse as I am preparing the beets to process.

I picked probably... well hold on let me go weigh them... 20# of grapes today. Problem is, I've never processed grapes before.. what do I do with them? How do I do it? Any great tips? They are definitely not table grapes, they have that rustic taste like a muscadine does.

I am so far behind it's not even funny. Squash, tomatoes, pears... now grapes... I need some of you herculean women to come help me!!!

My cukes did nothing. It was a cold summer. I planted 6 plants and have gotten nothing.

I am just now seeing tomatoes on the vines. I was hoping to make catsup. Maybe the late summer will last long enough for them to ripen.

Yes, I pickle my beets. I love pickled beets. I could live on pickled beets.

I am told this is not really beet country, so I didn't even bother planting any.

You can make grape jam. I made some last year and it came out really good. I used the recipe in the pectin box.

I will be putting in a late crop of peas early next week.

And canning applesauce next weekend if the neighbor's apples are ready.
 
I love pickled beets too. Sounds super yummy! If we had a bunch canned DD and I would probably try to put them on the menu quite often, much to the chagrin of DH. LOL! People don't grow beets much around here either.

Yes the cool summer. Cucumbers stop and start... maybe 5 a week LOL! And my cucumbers have been sneaky this year. I go out there and look them over like I'm checking a dog for ticks, just to try to find enough to eat fresh, and barely find any. Then I'll go out there 2 days later to pick again, only to find a couple of hidden monster cukes! I'm beginning to think these plants don't like me.

Even the squash has kind of put on a bit and then nothing... fits and starts.

The tomatoes were late this year but they're making up for lost time now. Most of mine are eating tomatoes. But my 2 (yes 2) little roma plants are really pumping them out now. I saw some paste tomatoes that somone on another thread posted. Next year I want to find some of those to can!

Hmm good idea on the jam, I haven't even looked at the pectin box. I will say the chicks love the grapes LOL!

I have grape vines too, I cook out the juice and put it in the freezer. Make it later when you have more time.

Did salsa, blueberry jam, and dill pickles this past week. Got LOTS of lemon cucumbers that I need to work up. Figure I"ll make some type of pickle out of them. Saw a recipe that used white raisins and cucumbers for pickles. Sounded different anyway.

I made some cucumber catcup... NEVER AGAIN! Nasty stuff. Threw it away. NASTY! Waste of good sugar and spices I tell ya.


Neighbor is selling green beans $20 a bushel!!! OMG! I about fainted. I called her up, and am next on the list to get them when they're picked. I can't believe she's only charging $20! WOW! I just canned 21 quarts a few weeks ago, and paid $.99/lb for them, figure that's $60/bushel!!! WOW! Unbelieveable.

Hubby bought me a box of qts and pts today at a yard sale. Pints were new with the lids and seals!

Tomatos and Green Peppers coming in left and right. Anyone have a good spaghetti sauce recipe that is canned? Need to buy some garlic and I think I probably have everything else I need, except a recipe.

Didn't see one listed in the index from here yet. Thought I'd check and see.

Otherwise, my garden is about done for. Don't think I'm going to have any corn, it's just not growing, and the chickens have helped pecked it.

This was our first year of having a 'real' garden, so we're learning lots as we go, and figuring out what we need to plant for next years harvest.

So far my mistakes have included:
1. Not planting enough peas. Didn't get enough to can.
2. Not planting the corn, and green beans early enough.
3. Didn't get tomatos staked early enough.
4. Planted way too many cherry, and roma tomatos, and not enough of the large ones. Think the big ones we planted were beef masters?? Large and meaty! Great tasting, and good size for sandwiches as well as canning. Planted one I think it's called Early Girl, rather smallish, round, smooth tomato. I like it, and right size for canning, but didn't plant enough of them.
5. Figure out rotation so I use the area better. Gotta remember to get peas, lettuces, etc in early, then pull those and start second round.
6. Need larger garden space!
7. Let neighbors know what we'd like so we can buy from them if they have an excess. Let them know what we have in case they want some.
8. Don't wait until canning season to look for jars, lids, etc. Prices went up then.
9. Buy sugar during the winter before prices go up on it as well.

I'm sure there's more, but those are the ones I'm thinking of right now.
