What are you canning now?

No its not all this years , Its within the last 3-4 years.Some things I do every year some every other year.I just needed to organize it and see what I need to do more of. Thats not all of it. That just whats in the root celler the rest is in the basement.I do like to look at it. I made it my background on the puter at work. It makes me feel like Iam at home.LOL.

I use to grow alot but now its just me and Hubby so I grow less. The kids still come and ask for a jar of this and that so I do can extras.For the kids and gifts. We have a place we can go pick canning tomatoes so I do get those the rest I grow my self or get at the market . I grow all my own berries and fruit trees too so that helps.I go to meat sales and buy a couple hunded $ in meat and come home and can it up.

I canned a pint of Jalapeno slices, in vingar! and added peppers to last year pepper sauce


Off the subject, anyone grow your own garlic (purpleglobe allium in most books or others varitey)? Momma has raised the purple globe and I helped gather it in couple weeks ago, we dried most of it and still got small bulbs she will put out the fall when her garden dies down, but I would like different varitey to go with it is why I ask.

We did Elephant Garlic too last fall. For $3 in organic bulbs to plant, I was able to get 8 lbs of garlic. We still have 2 heads left.... but I wish I grew more, which I will this year.

On the way home yesterday I got a call from the farm stand I sell at and they had fresh figs for me! So I went to their house and picked 2 quart bags of figs. Now... I NEED a fig jam recipe!!! YUMMMMMMM

Woooohoooo.... lets can!!!

I have been trying to find figs it seems like forever, I REALLY want to try the FROG JAM recipe we talked about awhile back. PLEASE post pics if you make!
FROG JAM

4 cups of Figs
2 cups of Raspberries
½ cup fresh Oranges juice
1 TSP of minced Ginger
1 pinch of clove seasoning (optional)
2 ½ cups of white sugar
1 pouch of liquid pectin
1 TSP of lemon Juice
Directions
1. In a blender mix and mash all the fruits together.
2.Allow to sit for 30 minutes
3.Place fruit mixture in a large pot
4.Mix in the liquid pectin with the sugar.
5.Bring the mixture to a rolling boil over high heat.
6.Stir continuously
7.When thick lower the heat to a low heat for 45 minutes
8.Add a pinch of clove and continue to boil for 1 minute.
9.Remove from the heat.
10. Continue to stir for five minutes
11.Remove from heat and skim foam from surface
12.Ladle mixture into sterilized ½ pint jars leaving 1/4 inch of headspace.
13.Wipe the jar rim with a clean cloth and attach lid.
14.Seal and water process for 10 minutes at altitudes under 1000'.
 
oooooooh.... maybe next batch I will try the FROG jam! My raspberries have not turned red yet. I guess we have duel season raspberries as the first round was back in June, and then more shoots and flowers came out at the bigging of the month they should be ready around the beginning of Aug. I will be getting more figs as well, the lovely family that they are, doesn't get enough at a time to sell but are more then happy to let me get whatever use out of them I can!

I was told to come by and help myself, they didn't even need to be home... just pull up to the treat and load a bag!
