What are you canning now?

Bockbock - sometimes I just freeze extra juice to make stuff later when I have more time, fruit, or an idea of what I want to make. There's blueberry & pear in my freezer now

Another question -- I am wondering if my cranberry sauce will be any good. I used a recipe that said to boil the sugar and water and the add cranberries and chopped oranges. Do not stir. Take the cranberry sauce off the heat after the cranberries begin to pop. There was no time on how long to cook the cranberries once they were in the sauce. So it only took maybe two minutes for most of the skins to pop (I could hear them, too). And then I processed them for 15 minutes in a hot water bath canner. I read other recipes now that say to cook it for another 6-8 minutes after adding the cranberries and oranges. Will it be any good? I didn't cook it long enough. Thanks!!
 
The wedding is finally over I(boss' daughter and I did all the decorations and flowers) so I can starting canning up all the frozen juice that I have in the freezer. Better yet my husband got to come home for the first time in 10 weeks.

He has been working out of town. Anyway, he tasted the Habanero sauce that I made and loved it. Actually, I liked it too - I think the carrots mellowed out the hot.

Taking 6 days off from work so I plan on canning some the Cranberry Chutney, baking bread and making jelly.

I FINALLY got my cranberries and other ingredients for the chutney! I made some and will give a jar as a hostess gift tomorrow along with a poinsettia. It sure tasted good!

The recipe said 10-11 half pints but I only got 9! Darn...Terri O

Terri... was that my recipe... or was it the one I had changed?! Either way... I think it was amazing!

I have a jar set aside for myself when I am ready to make a left over turkey & stuffing sandwich tomorrow. It sure tastes amazing!
