What are you canning now?

Making and Canning Homemade Barbecue Sauce I tried this recipe last year. I cant fint the copy I printed out and wrote on but I remember I added more vinegar then labeled it as tangy BBQ sauce. It was amazing (but burned really really fast on the BBQ!!) I sent home 3 jars with my oldest brother and dad and said make sure Trav gets a jar (the middle brother)!!! Betcha you already know the jar never made it that far!

i have created this sauce and love it, can any one help me on how to can it in my pressure canner. how would you can it? i am thinking 11lb for 15 minutes.

chilli sweet sauce

1 cup suger
1/4 cup cider vinegar
1/4 cup water
1/2 cup tomato ketchup
1/3 tsp chilli powder


put suger, vinegar, water and chilli in to a pan bring to the boil and simmer for 5 minutes. then add the ketchup and simmer for 1 minute stirring all the time.
let cool and serve hot or use it cold it's YUM
the amount of chilli used gives a lovely warm heat to the mouth.
 
That might have enough sugar and acid and salt to hot water bath can. If you are a kitchen creator, you may want to purchase a Ph meter so you can make sure it is high enough. The Ball book has a page up front that tells you the needed acid levels for canning hot water bath method. I usually add citric acid and salt to my tomatoes, because they tend to be low acid.
 
thanks gona have to buy a Ph meter now am in to this canning. but as for now i want to can this sauce and i want to use my new pressure canner if i can please please please please and a prity please

Does anyone here have a Kitchen Aid? If so do you have the Pasta making attachments? If so how easy are these to use? How easy are they to clean? Dish washer safe?

I got it last year for Christmas and have used it 5 or 6 times. The first three or four times I washed it. In the sink. SUBMURSED in the sink. Bad. I just took it apart last night because it was getting to hard to crank and lubed it all up with sweing machine oil. Much better. We will be making about 15 batches for gifts in the next couple days. If it has rollers, I would advise to just wipe it clean and the next time you use it, you may have run a little dough through to "clean" it.

ETA: I just went and looked them up and they are pretty much the same as what I have without the hand crank and the stand. Do not put them into water. Just wipe with a clean dish cloth.

Sorry I've been so super busy with Christmas orders, just wanted to check in and catch up on your posts!

I'm glad you guys are still going, I haven't gotten a chance to can anything since my last Jam Class I taught and that was Dec. 4th! lol Feels like forever and a day ago!

I just canned enough french onion soup for everyone on my Christmas list. Very nice gift if you take the time to custom make tags that suggest adding asiago and croutons, and SO cheap! All you need are onions (so cheap at the farmer's market!) and beef boillion (I used vegetarian) and voila! Beautiful, well appreciated gift. You just can't get good french onion soup at the grocery store so most people really appreciate it.
