What are you canning now?

No, but I have plenty of honey and cranberries. I should have tried to make some.

You guys just reminded me I didn't can my cranberry chutney this year!? BUMMER! That was always so yummy on left over sandwiches all winter.

I had some pear juice frozen from our pear trees this year and wanted to do something with it. I was planning on making vanilla pear jelly that someone on here had mentioned. I only had liquid pectin and couldn't find a recipe that called for liquid instead of powder. So to the Ball Book I went and found cinnamon pear jelly. I made that recipe but in addition to the cinnamon, I added about2-3 teaspoons of my homemade vanilla. OMG! (gosh) I used about half a cup more than the recipe called for, because that is what I had frozen and its still trying to set up after a week. But even if it doesn't it will be awesome on ice cream. To me it tastes like fried ice cream. To my 16 yo SS, it tastes like honeybuns.

I realize I'll have to go back to check a few things.

I just put the last four jars of Pomegranate jelly in the canner. DD and I are going to do the Cranberry when she gets up.

I used 3 fresh pomegranates with a bottle of organic juice. However there are other juices in the organic juice. Does anyone know where to buy 100% pomegranate juice?

I used whole frozen Cranberries. However the organic juice does have added other juices too.

I used my new food mill for the first time. Very helpful but I expect I'll still be straining with the cheese cloth if I want clear jellies.

I have two Pomegranate jelly recipes and had to add and divide them. One called for 6 cups of sugar but since I was using juice with added other juices I use the other recipe that called for less sugar. It would cost a fortune to buy enough Pomegranates to get the amount of juice the recipe called for. As it was organic juice cost a lot.
 
I canned a bunch of meatless spaghetti sauce. I figure you can brown some meat and add it to the sauce when you heat it up.
Made 7 quarts and 4 pints (then theres the 1 1/2 quarts we already ate!)

And not that its canning, but it's in a jar. This gets me out of baking everyone cookies this year!!

I also did white chocolate-cranberry cookies and a butterscotch brownie mix in a jar.

Ended up with a bunch of strawberries for strawberry jam instead.
