I would compare your recipe to those in the BBB. If the variation is not much different as in spices and liquids, I would use the book as a guide line. I hope this helps.

It has several types of heirloom tomatoes, ancho chiles with a small amt of habenero, onion, garlic, cilantro, salt.

I am going to have to gear up to can sweet potatoes soon.
Do any of you have any advice on what not to do?
It will be me and the canning book... alone and under pressure.

I bought myself a present with gift cards and cash I got for Christmas. I've been wanting one for a while (MIL has one and raves about it), but couldn't justify the $$$ for it. I just got it today.

It's a Vitamix blender - no more seeding issues for me with my jams, this sucker purees all the seeds.

Don't have to take skins off tomatoes either. It will cook soup, make sorbet and it cleans itself. (put a couple drops of soap in and run for 30 seconds, then rinse) I can't wait to play with it.
