Tomato marmalade
5 cups coarsely choped tomatoes, peeled, I seed too
2 large oranges
1 lemon
4 cups sugar
Half and seed oranges and lemon. Finly chop and add to tomatos in a saucepan. Bring to full rolling boil over high heat. Slowly add sugar, stir untill dissolved. Return to a boil and boil rapidly untill mixture forms a gell ( about an hour). remove from heat, ladle into jars, prosses 10 min in water bath
ok thanks going to try that tomorrow hmmm I canned four jars of green mexican salsa tonigh was a little tricky but hubby loves it way too hot for the rest of us woo hooo I have green red and purple in my pantry so pretty
For the tomatoes...Red Enchilada Sauce. I found a recipe on allrecipes.com & adapted it for fresh tomatoes (of course I didn't write anything down) & then canned it. Came out great, I wish I made more before the tomatoes tanked

I have a question for you experienced canners. I have about 30 to 40 old mayonnaise jars. I have heard that it is ok to use these to can stuff in. I think I have done it before, but I don't remember for sure.
I have also been told that you should not use these for canning. I am hoping to can some apples for pie filling and would water bath them since I don't have a pressure canner. What do you think, would it be ok to use these jars?
