What are you canning now?

We cold pack our dilly beans. We add lots of garlic and some red pepper flakes. Then water bath until they JUST start to turn color. Never as long as the recipes call for:( they'd be rubber or mush. We've made them for yrs with never a problem sealing or staying fresh. We have to hide them. Even now that the kids are all moved out. They come looking for them. I always make enough to gift for the holidays....but somehow it never happens..lol
 
Whew........ finaly got through all the fruit. Here we have, clockwise from left, Apple Pie Filling, Apple Pie Jam, Pear Jam, both Sugar Free as well as Reduced Sugar Peach Jam, Pepper Jam (was VERY good on Pork Loin Roast), and Plum Jam. Only things missing in the pic, I just realized, are the Spaghetti Sauce and Pickled Peppers.

Earlier this summer we canned some pickling cucumbers for the first time. They turned out DELICIOUS!!! We'll vary the recipe next year since we found it to be just a little too salty. But last week we canned some of my famous applesauce

and apple butter. I haven't tried the apple butter yet, but the applesauce was to die for!!!!

Is there such a thing as pumpkin butter? We've got lots of those too! And looks like I'm not going to work today!

Don't forget the garlic in with the basil and I would use a tad bit of olive oil preferably!

all i can find is pearl onion canning recipes.. i have a ton of yellow onions and i want to cut them up and can them (pressure can). any reipes out there? Thanks!


And in addition , ill be doing some chicken stock and also potatos in the next coming weeks.
 
I am no help with the onions... I jam mine with garlic and lots of sugar!

I want to say I may my applesauce last night! FABULOUS!!!!

Mulled Applesauce

10 Large Rome Apples Peeled and Cored (Chopped small)
Zest from 1 Orange
Juice of half of it
1/4 tsp ground cloves
1 tsp Cinnamon
Dash Nutmeg
2 Tbsp Honey (I used a dark amber)
1/2 cup brown sugar

In your crockpot add you chopped apple, zest, juice spices and honey. Heat on low for about 3 hours. Stir occasionally until apples start to soften. For smooth sauce, send through food processor , for chunky whip out the potato masher. Once at the consistancy you want, add brown sugar and combine. Let sit about 30 minutes on warm, add to sterelized jars and water bath about 10 minutes.

This made 3 1/2 pints for me.
