What are you canning now?

Canning Picante Sauce.
Tomatoes are the only thing left growing in my garden and there won't be many of them after a picing or two.
Way too hot and can't get enough water on it.

Got a bunch of plums and apricots yesterday from my husbands grandmothers trees. They are a hair under ripe, so hopefully by Sunday I can make some jam. We are leaving Monday for vacation for a week.
 
I have increased the recipe for preserves, and it takes a lot longer boil to set. I would think jams/jellies with pectin might be similar.

They are perfect for canning, being ripe or over ripe can cause jellies from setting, having a bit of the fruit green has a lot of natural pectin. and set beautifully, unless of course the boxed pectins have come along ways to get the job done. :) Happy canning
 
Our peaches are still growing--for some reason they end up in the duck pond--the drops that is.Maybe my boys know why . . . hmm...


We have been considering honey bees too.
 
I just found out I missed the Gooseberries and I'm not happy about it. They send me e-mail alerts but didn't send me one about Gooseberries. This is the first year since I planted bushes so there is none on mine. I do hope next year is better.

There were a few Red currants but something got them before they turned red. I suspect the chickens.

I'd like to do peaches but I don't have time now. Can I peel them and put them in the freezer for later? I've a few recipes I'd like to do but things are just to busy and I may go away for a month or two.
