What are you canning now?

So sick and tired of the failed cukes this summer (2 plantings and I got like 5 cukes from both plantings). So I stopped by the farm stand and forked over the $$$ for pickling cukes for this fall. I'm making a batch of garlic and batch of dill. I don't know how I'll get through winter w/ out pickles!!!!??? hahaha

I know what you mean. I pretty much always end up buying them...at least that way I can get enough of the same size to be able to do several quarts. The plants we put in here are basically just for eating.
 
I'm doing some garlic in the dill one, but no dill in the garlic one (and double the garlic). I love pickles because you can make the brine any way to want. LOVE! Num Num
 
Shoot, I don't even make brine any more...at least not for dills. I use a recipe where you can 'em by the quart so you can do big batches or little 'uns, as the cukes are available.

I love B&B pickles too, and they're DH's favorite...I do have to make a brine for them so that's when I definitely get a box of cukes to do...I'm not gonna make all that brine in fits and dribbles...I want it all done at once, LOL

I add a jalapeno to my B&B pickle brine and 1/2 jalapeno to each jar for a small kick

I'm in the same boat. So far I have ONE cuke. That's it, no more. The last couple years I've drowned in cukes, guess it was time for a strike of sorts huh? Had to buy some earlier this year, thinking about doing it again.

Does any one have the recipe for the Basil Jelly? I have been using the forum search feature and it keeps dropping me back at page 1 of 739. I know I printed it out, just a matter of what I did with it. I think some one posted in July or August.

I had it copied, but it is on my other computer, getting repaired..... I really could use it too, I am getting lots of fresh basil tomorrow.
 
MMMMmmmmmm My house smells divine!

I finished 8 pints ( I like pint size) apple pie filling, 6 pints apple sauce(the texture turned a little funny, really smooth **shrug**)

and I have 2 crock pots full of Salted Caramel Pear Butter cooking as I type. It tastes so amazing I cant wait to see how it is in the morning LOL.

I also have the apple peelings and cores dripping in a cheese cloth for the morning, I will then make apple jelly(probably spiced)

Should get another 6 pints or so of that and probably tons of the pear butter!

That pear butter sounds marvelous! Care to share a recipe? Gonna be out all day today but tomorrow is canning day on the ole homestead, LOL
