I had a mink problem this fall...evidenced by the capture of three of the little devils. Most of the 50+ birds that were killed had the heads completely ripped off but some were like this.
I would say mink, possibly weasel (basically the same but smaller).
Mink are notoriously hard to catch, they are very picky about what bait they'll take. I've heard that minnows or other type of fresh fish work well. I caught one using hamburger as bait and one using a carcass that was left behind from a previous attack the night before. (The other one was cornered in an old silo by our dog.)
If it was a mink, he'll be back for more. I would get some traps out.
