i like the breast without the skin as healthy as i can get it this is one of the days out of the year i go nuts.

My Aunties used to pick the skin until there was really very little left - can't blame them for that.

The leg or the thigh and, of course, the skin! Everyone else can have the white meat!

PC, flip your turkey or chicken over backside up. Run your fingers down the backbone and stop just as you get the place where the thighs come together. See that spoon shaped indention that fans out on both side just above the thighs on either side? Use your thumbs and push out that plug of meat away from the bones. It is 'oyster' shaped and the most tender pieces of meat on the bird.

Legs. I like dark meat, it tastes more distinctly "turkey-ish" to me.

I actually prefer goose to turkey for that reason, but don't have the space to raise waterfowl.
