WHITE SCALLOPED SQUASH>>what to do with it all??

heres the one from Martha Stewart this month, not the one I Mentioned earlier that must have been in Sunset, I'll find it a post it next, but this sounded really good too. I haven't tried it yet.

WARM SUMMER SQUASH SALAD

3-5 T EVO
2 garlic cloves thinly sliced
2 lbs squash thinly sliced (magazine used zuke and yellow) picture showed it sliced like on a mandolin.
2 T balsamic vinegar
2 t chopped fresh oregeno + sprigs for garnish

Coat large skillet with EVO
add a third of garlic over medium high heat until sizzzling
add a third of squash cook until just wilted and browned around the edges (2-3 min)
transfer to plate
reapeat two more times with remaining.
stir in vinegar into last batch and let evaporate slightly.
return verything to skillet and toss with oregeno
serve warm or at room temp.

oh gosh...that looks so yummy!! Thanks so much!! Do any of ya'll make the "zuccinni patties" that i've seen floating around?? Do you think these would work in the recipe?? Just a thought....

DELICIOUS!!!!

It tastes great raw or steamed and stuffed. Raw, I think I like these even more than cucumbers and I LOVE cucumbers.

I am definitely growing these next year!!!
 
wifezilla...try them with hummus or your fav dip...yummo!!

I do this with jicama since I don't eat wheat, corn or rice. The pattypans will also make a good dip scooper and give me some texture variety.

I also need to add these things have a very unique smell to them. Like a cross between a cucumber and an apple....sort of. Very hard to describe but it smells wonderful. I noticed that as soon as I cut in to it.​
 
Wifezila...I just found another use for the patti-pans...grate them and use them in the "canned cake" recipe!! This was the first time for me to try this recipe, I just subsituted the patti-pan grated for the Zuch. that the recipe called for. DH & Kiddies never knew a thing;) when I told DH he was impressed to say the least!! This will be a staple on the shelf from now on!!
