heres the one from Martha Stewart this month, not the one I Mentioned earlier that must have been in Sunset, I'll find it a post it next, but this sounded really good too. I haven't tried it yet.
WARM SUMMER SQUASH SALAD
3-5 T EVO
2 garlic cloves thinly sliced
2 lbs squash thinly sliced (magazine used zuke and yellow) picture showed it sliced like on a mandolin.
2 T balsamic vinegar
2 t chopped fresh oregeno + sprigs for garnish
Coat large skillet with EVO
add a third of garlic over medium high heat until sizzzling
add a third of squash cook until just wilted and browned around the edges (2-3 min)
transfer to plate
reapeat two more times with remaining.
stir in vinegar into last batch and let evaporate slightly.
return verything to skillet and toss with oregeno
serve warm or at room temp.
