Why's my rice not cooking?

Hi,

Usually baking rice in the oven it turn out pretty will given that it has enough moisture of
help the rice soften. I see that the recipe does as for baking. One thing that I always do
when making a casserole with rice is to cover it with foil. I find that the foil keeps the moisture
in and thus makes the rice turn out well. In addition, the rice on top does not burn.

From a seasoned many generation rice cooking ABC... rice cookers FTW! Used daily... they are awesome!

I have a xojirushi Neuro Fuzzy rice cooker in the 5 cup version. My mom has the 10 cup version... her 8 other siblings households have one or more from that company in the . My dad's side of the family also has them... and so does all my SO's side of the family. It takes about an hour to make rice from a "raw" unsoaked state and is perfect every time! If you don't have a calibrated pointer finger knuckle, the lines are great. Add to the line for jasmine types, just under the line for sticky types, and just over the lines for regular types... how to tell the difference.. not sure, our rice is bought in 50lb sacks with funky characters on them. LOL

I had some friends with cheap ones and they just weren't the same in how even they cooked the rice... however, if you don't use it daily... an expensive one is a waste of money.

I don't think you can make rice in just 45 minutes as the recipe states unless they are using that American instant rice stuff.

I love rice...I've just never cooked it...or at least cooked it well. I think I will look into getting that for my Christmas present...guess I'll hold off on the tupperware then.

Well, I am no longer cooking the casserole that turned out not exactly how I planned. Like red said, mush but at least it's kinda tastey even still. I will not be taking this over to cute neighbor. tee hee I bet he'd eat it despite but nah, let him think I can cook. I mean, I can... it just doesn't go as planned every time.

I love making rice in the microwave. I bought this rice cooker from Pampered Chef:

I have always done rice in the microwave and I always used a covered pyrex dish to make rice, but sometimes it would boil over and coat the bottom of the microwave. If I didn't clean it up right away, it would tend to rust out the bottom of the microwave. After going through 5 microwaves in my 12 year marriage, I decided to buy this specialized rice cooker because it has an overflow feature. I call it my Microwave Insurance.

1 cup rice
2 1/2 cups water
dash of salt

Microwave directions:
Boil for 5 min on high
Boil for 15-18 minutes at 70% power
 
My elevation is not all that high, around 3500 - 3700 feet. It does affect how the rice cooks though, so..... I bought a rice cooker and it works o.k.(hate cleaning it). Then one day I just boiled the rice like it was spaghetti and we love it. It also means that when it is done and I drain it in the strainer I can rinse it off and is perfectly fluffy every time!
 
My guess is that you put frozen vegetables in without thawing them. Therefore, the water did not get hot soon enough to cook in the proper time. Then, to fix it, you add more water, cook longer, etc., that just makes it soggy mush. Next time, you need to thaw the veggies first. Everything should be at room temperature or warm for this casserole to work.

Make the cute neighbor something baked. Cookies, muffins, etc. Ooooh, homemade bread! Everybody loves that (except celiacs

). Good luck. You know, a loaf of bread, a jug of wine and thou.

But I bring him food so it's an equal trade off, I think. Let's see...I've made him homemade turkey noodle soup, cream of brocolli soup-twice, home made tomato soup, oven fried chicken-twice, spaghetti & meatballs with home made sauce, roast beef/potatoes/carrots/celery/onions-twice, banana bread, chocolate chip cookies, peanut butter cookies...and I think that's it. His dad and two little boys were visiting when I brought over the roast...he said they really liked it.

He will be mine.... <g bats eyes ever so adoringly....
